Ingredients:
4 chicken breasts
1 cup ketchup
1 can diet soda (I used Diet Dr. Pepper)
Directions:
1. Put chicken in non-stick skillet
2. Pour ketchup and diet cola over the top
3. Bring to boil
4. Cover, reduce heat and cook for 45 minutes
5. Uncover, turn up the heat and continue to cook until the sauce becomes thick and adheres to the chicken
It turns into the most incredible BBQ sauce and it's only 4 points per serving.

I served this with broccoli in cheese sauce (Green Giant) and polenta.

I have been a "vegetarian" for over a year now--it was my New Years resolution last year. Since 1/1/09 I haven't eaten any red meat. At around 8/09 I started eating seafood. Then 1/1/10 I started eating chicken again. There are so many more options now. I just need to ween myself off of free range though because it's so expensive!

Does it work with regular coke?
ReplyDeleteLooks good except that I don't drink diet. I don't really drink pop anymore at all, but never diet. Maybe I might try it with regular.

ReplyDeleteI used regular coke before. It doesn't taste much different. I LOVE this. So easy and tasty! I usually use diet coke or diet dr. pepper, just because of the calories.
