Tasty Tuesday – Cola Chicken

This is a Weight Watchers recipe and so delicious. I got it a long time ago from a co-worker. It’s quick and very easy.

Ingredients:
4 chicken breasts
1 cup ketchup
1 can diet soda (I used Diet Dr. Pepper)

Directions:
1. Put chicken in non-stick skillet
2. Pour ketchup and diet cola over the top
3. Bring to boil
4. Cover, reduce heat and cook for 45 minutes
5. Uncover, turn up the heat and continue to cook until the sauce becomes thick and adheres to the chicken

It turns into the most incredible BBQ sauce and it's only 4 points per serving.



I served this with broccoli in cheese sauce (Green Giant) and polenta.

I have been a "vegetarian" for over a year now--it was my New Years resolution last year. Since 1/1/09 I haven't eaten any red meat. At around 8/09 I started eating seafood. Then 1/1/10 I started eating chicken again. There are so many more options now. I just need to ween myself off of free range though because it's so expensive!

Looks good except that I don't drink diet. I don't really drink pop anymore at all, but never diet. Maybe I might try it with regular.

Can you even taste the soda? I'm just trying to figure out why people are asking if you can use regular soda....anyway, sounds good and easy, my favorite kind of recipe! ;-) oh and not fattening! yay!

I used regular coke before. It doesn't taste much different. I LOVE this. So easy and tasty! I usually use diet coke or diet dr. pepper, just because of the calories.

Have to admit, ketchup and diet coke dont seem like the best things on chicken, but this sure looks good!

I should totally try this being on a low-carb diet, I can't really have BBQ sauces!

Hey, have you tried the WW diet coke cupcakes? So good and only 1 point or the brownies made with black beans? Sounds gross but not bad at all!

My friend added Coke to marinate beef for BBQ and it was good.

It scares me, it really does. But seeing as how I have an unhealthy addiction to Coke Zero, & a weakness for Coca-Cola Cake...well, I may give it a shot. ;)
