Tasty Tuesday: Crock Pot Mexican Soup

Here’s another tasty recipe I found on Pinterest, tried and loved.

This was SO easy and really tasty. Geof was practically licking the bowl! I will say it comes out rather thick more like chowder. It was super filling and full of flavor.



Ingredients:
1 can Rotel
1 can of corn
1 can black beans (drained & rinsed)
2 frozen chicken breasts
8 oz cream cheese
1 packet dry ranch dressing
1 tbls cumin
1 tsp onion powder
1 tsp chili powder

Directions:
1. Put all ingredients in crock pot and cook 6-8 hours.
2. Shred chicken

Enjoy!

Sounds tasty! I've tried a few Mexican chicken soups lately and they were all delicious, but the creamy factor here has me really wanting to devour this one. It may be making an appearance in our crock pot shortly.

That sounds a lot like something I make except we put it over rice or in a tortilla! I imagine as a soup it is pretty thick! Have you seen the recipe for lasagna soup? I want to try it!
